This is a very healthy and tasty dinner for you and your family.
Fish is always a good option for healthy meals, it is recommended to eat fish at least once a week.

2 cups thinly sliced squash or zucchini
1/4 cup sliced shallots
1/4 cup sliced fresh basil
20 cherry tomatoes
4 tbs white wine
4 tbs extra virgin olive oil
5 oz skinless white fish fillets (cod or halibut)
Preheat oven to 400°F.
Place squash slices over silicone baking mat, in thin layer. Sprinkle the shallots and basil over. Spread tomato halves over squash. Drizzle with 1 tablespoons wine and 1/2 tablespoon oil. Season with salt and pepper. Place fish fillets on top of squash. Season with salt and pepper; drizzle 1/2 tablespoon oil over each.
Cover the tray with parchment paper to form a sealed packet, this will make the fish cook in it’s own steam.
Place tray in pre-heated oven. Bake for about 10 minutes or until fish is cooked through.
Carefully take parchment paper, there will be very hot steam.
Take out of baking mat, serve and enjoy your lovely meal.
