Monday is a good day for a fast recipe. Few ingredients, few steps, and lots of yummy flavour.

250g cherry tomatoes
90g demerara sugar
2 tbs olive oil
2 tbs balsamic vinegar
Puff pastry - circle slightly larger than the skillet
Pre-heat the oven at 375º F
Heat a 15cm diameter frying pan, pick one that can go into oven.
Put the olive oil, sugar and tomatoes on the pan, and cook on low heat until sugar melts and it’s golden brown.
Add the balsamic vinegar, season it with salt and pepper and cook a little longer.
Remove from heat and place the puff pastry circle over the tomatoes.
Bake on medium heat for about 15 minutes until the dough is baked. Gently unmold from the pan while it’s still warm.
That’s it! A Cherry Tomatoes "tarte tatin", easy, beautiful and delicious.
