175g Melted Butter
1 Orange - juice and zest
100g Grated Coconut
1 Tbs Baking Powder
2 Egg Whites
50g Grated Coconut
Heat oven to 180 º.
Beat the butter with the sugar and orange zest until creamy consistency. Add the eggs one by one, beating well. Add the coconut. Add the sifted flour and baking powder. Add the orange juice and mix well.
Grease with butter and flour your cake mold or baking tray. Pour the mixture and bake for 30min.
Make the meringue: Beat the egg whites until stiff, add sugar, beat some more and add the grated coconut. Remove cake from oven let cool slightly.
Top the cake with meringue. Bake the meringue to get some golden parts or use a torch.
