150g of cold butter
300g sifted flour
4 tbs cold water
1 chopped onion
1 minced clove garlic
2 tbs olive oil
50g grated Parmesan cheese
200g sour cream
250g cream cheese
Ground Pepper & Nutmeg
Mix flour and salt in a bowl and add the butter cut into cubes, mixing with a fork or your fingers until mixture looks lumpy. Add gradually the water and mix until a smooth dough. Form a ball, wrap in plastic wrap and refrigerate for 20 minutes.
Heat the oil in a large pan, add garlic and onion and cook for a few minutes, slowly add the spinach, saute it for a few more minutes, until the liquid evaporates and spinach wilts, season with salt and pepper. Reserve and let cool down.
In another bowl beat the eggs well and then add the cream cheese, parmesan, sour cream and nutmeg. Finally add the sautéed spinach and mix well.
- Putting it together:
Pre-heat oven to 350º F.
Open the dough with a rolling pin, place it on a round shaped baking tray and lightly make some holes with a fork at the bottom of pie.
Bake the dough for about 5 minutes. Remove from oven, place the filling over the dough and put back on the oven for about 40-45 minutes until golden brown.
Let it cool down a bit and enjoy this delicious and nutritive quiche.
