4 medium eggplant
250 gr of ground beef
1 chopped onion
1 clove garlic
15 chopped green olives
Black pepperChopped parsley
40 gr of grated parmesan
Take the tip and cut the eggplants in two lengthwise.
Cook in salted water until they are softer.
Remove the pulp with a spoon and reserve the shells in canoes format.
Put the ground beef to fry on olive oil, add onion, garlic, salt, pepper and the pulp of the eggplant, stirring constantly.
Simmer until reduced and the water will loosen the eggplant.
Turn off the heat, add the olives.
Arrange the eggplant shells over the baking mat and fill them with the filling.
Sprinkle with the parmesan and place in the oven until the parmesan looks melted golden brown .
