This is a great recipe to give good use to that left over cake, and the result is yumminess at its best!

Leftover sponge cake
3 packs of Mascarpone
4 natural Greek Yogurt
4 tbs Sugar
1 tsp vanilla extract
1 bottle of Red Fruit Jam
400g assorted Fresh Red Fruits (Strawberries, Blueberries & Blackberries)
100g mix of Walnuts & Chopped Almonds
Beat the mascarpone with the sugar until creamy. Add the vanilla and yogurt.
Place in a pretty glass bowl, a layer of crumbled cake, spread the jam and cover with mascarpone cream. Top with fresh fruit and sprinkle walnuts/ almonds mix.
Repeat the process as often as necessary to fill the bowl taking care to end up with a layer of cream and then put the fruits and nuts to decorate.
Place on the fridge for a few hours and serve well chilled!
