Take a look at this healthy fast recipe, great for a week dinner.
2 tbs Olive Oil
1 finely diced Onion
1 finely diced Red Pepper
2 finely diced Italian Tomatoes (or ½ cup grape tomatoes)
6 halved lengthwise Zucchini
1-2 sprigs fresh Thyme
1 Cup chopped baby spinach leaves
1 Cup cooked Quinoa
5 torned fresh Basil leaves
1 tbs grated Parmesan
½ cup grated Mozzarella
Pre-heat your oven to 375º F.
In a pan over medium heat, add the olive oil, onion and red pepper. Sauté a bit just until the onion softens a bit.
While you’re waiting for the onions to cook, take each piece of zucchini and remove some of the seeds (core), like you’re making some space for the filling. Add to the pan the tomatoes, zucchini bits, thyme leaves and season with salt and pepper. Let it cook for a couple of minutes. Add the spinach and stir until the spinach wilts down.
Remove the pan from the heat and mix in the cooked quinoa and fresh basil leaves.
Place the zucchini pieces over your Baking Mat and fill them with the mixture. Cover with foil and place in the oven,bake it covered for 30 minutes. After 30 minutes, uncover and top each zucchini with some mozzarella and sprinkle with the Parmesan cheese. Take the sheet back to the oven for about 10 minutes or until it’s the top is golden brown.
Remove from the oven and serve.
